Mean Green Turkey Burgers with Spinach Feta Pesto

Troy is a meat and potatoes kind of guy. He could easily go days without a vegetable, and not even realize he has deprived himself of nature’s promises! He is such a carnivore 😆! If I prepare them he has no problem eating them, but due to his work schedule and travel, he is the gatekeeper of what goes in his body. He has to proactively make an effort to incorporate vegetables to ensure he is eating a balanced nutritious diet. I have a saying, “A colorful plate of food is a better plate of food!” When Troy played for the Philadelphia Eagles I developed my turkey burgers with a spinach feta pesto. He gets his meat, and I serve up some vegetables. It is flavorful, and not only does Troy love them, but so do the kids. They are a great tailgate item and a sure crowd pleaser! These burgers are great because you can prepare your patties in advance, and they freeze well for later use. I am able to freeze in portions, so Troy can pull them out when he is ready to cook. EASY PEASY

 

 

Yields 4 —1/4 pound burgers

8 —1/8 pound sliders

Ingredients

  • 1 pound of ground turkey (if using lean, make sure it has at least 7% fat for moisture)
  • 2 cups fresh baby spinach leaves
  • ½ cup feta
  • 1 garlic clove
  • 1 t Salt
  • ¼ t Pepper

Instructions

  1. Place spinach, feta, and garlic clove into a food processor. Mix until a smooth like texture develops.

  2. Place ground turkey in a bowl and add the spinach feta pesto, salt and pepper, mix together.

  3. Choose cooking method —Skillet, grill, or oven. Burgers may also be frozen and cooked later.

    After cooking, place on a burger bun and add toppings of choice. To dress add slice of mozzarella cheese, mayo, lettuce, and, tomatoes.
