BBQ Beef Sandwiches

BBQ beef sandwiches for Sunday dinner, yum!

Ingredients

BBQ Beef

  • 2 Tablespoons Vegetable oil
  • 4 pound Chuck Roast
  • 1 Tablespoon salt
  • 1 teaspoon black pepper
  • 2 teaspoons cumin
  • 1 ½ cups vegetable stock
  • 1 shallot, chopped
  • 2 cups chili sauce
  • 1/3 cup molasses
  • ¼ orange juice
  • ¼ cup dark brown sugar
  • 1 Tablespoon Bourbon
  • 1 teaspoon BBQ seasoning
  • 12 Brioche Burger Buns

Coleslaw

  • (1) 6 cup bag coleslaw mixture
  • ½ cup mayonnaise
  • 1 teaspoon white vinegar
  • 3 Tablespoons sugar
  • ¼ onion, thinly sliced
  • ½ teaspoon celery seed
  • ½ teaspoon salt
  • ½ teaspoon black pepper

Herb Butter

  • 1 stick butter, softened
  • 1/4 teaspoon salt
  • 1 Tablespoon fresh parsley, minced
  • 1/8 teaspoon black pepper
  • ½ teaspoon garlic paste

Instructions

  1. BBQ Beef

    Make Coleslaw and refrigerate.


  2. Preheat oven to 375F. Mix salt, pepper, and cumin in a small bowl. Pat meat dry with a paper
    towel. Apply seasoning on all surfaces of the meat. Press seasoning into the meat.

  3. Heat vegetable oil in an oven safe pan (cast-iron skillet my preference) on medium/high. Place
    meat into the pan and turn heat up halfway to high. Sear meat on all sides until a golden crust
    is formed. Add vegetable stock to the pan.

  4. Place in the oven and roast for 50-55 minutes. Remove from the oven. Take the meat out of the
    pan and place on a large cutting board. Let rest. Drain off excess liquid in the pan leaving
    approximately 3 Tablespoons. Sauté shallots on medium/high. Add in the remaining
    ingredients. Stir and allow to come to a boil and reduce heat to a simmer.

  5. Chop beef into bit sized pieces and add into BBQ sauce. Allow to simmer, while toasting the
    buns.

  6. Herb Butter

    Place butter in a medium bowl and cream until smooth. Add remaining ingredients. Cut buns in
    half and butter the inside top and bottom halves. Place on a cookie sheet and bake in the oven
    until edges turn golden brown.

  7. Coleslaw

    In a large bowl add all the ingredients and mix together. Cover and refrigerate.

  8. Building the BBQ Beef Sandwich

    Create an assembly line of bottom buns. Add BBQ beef to each bottom and top with coleslaw.
    Place tops on. Serve immediately.
